Recipe: Chilli Beef Sunday Night Nachos

Chilli Beef Nachos


  • Good quality salted corn chips – enough to cover the surface of two oven pans
  • 150 grams of grated cheese – whatever you have – I used cheddar and mozzarella
  • 1/4 bunch of coriander chopped
  • One red onion finely chopped
  • 6 cherry tomatoes finely chopped
  • 1 avocado mashed
  • Half pot of sour cream
  • Left over beef chilli


  • Pre heat over on 180 degrees
  • Place corn chips on a lined pan in a single layer
  • Scatter with the cheese evenly and cook for 10 mins or until cheese melted and golden
  • Put corn chips on platter, dollop and scatter the other ingredients apart from the coriander in even spots around and on the corn chips
  • Scatter the chopped coriander finally on topĀ 
  • Enjoy with lots of napkins and a cold beer
