Lemon Pepper Salmon with CauliFredo Zoodles
Serves 4

Ingredients;
3 medium zucchini
4 100g salmon fillets
1 Whole cauliflower
Minced Garlic
Bunch of fresh coriander
Juice of half a lemon
Dijon Mustard
Salt and Pepper

Method;
Place salmon fillets in a bag or bowl and marinade with a good pinch of salt and pepper and the juice of half a lemon, leave for 10 minutes.
Place in the oven on a tray and cook on 180 degrees for 20 minutes – or to your liking, I like my salmon a bit rose in the middle.

You’ll need your zucchini noodler for this and I strongly recommend spending the extra for the really good ones like this one. It makes real noodles and produces less waste than the little hand held tube ones.
Breakdown a whole cauliflower and microwave with a touch of salt and teaspoon of minced garlic – until cooked through and then use a hand blender to whiz up into a ‘sauce’ I also added a teaspoon of Dijon mustard but you could add horseradish or just pepper or parmesan if you are enjoying dairy.
Place the ‘zoodles’ in a big pan with a bunch of shredded coriander and stir around for 5 minutes or so until things start to look like they are wilting – not too much you don’t want soggy zoodles! Add your cauliflower sauce and stir through.

Place in a bowl with your salmon on top and enjoy!
