Ramsey’s Ultimate Cookery Course

Gordon Ramsey – Ultimate Cookery Course
The book is big and full of all of the 100 recipes from the show and my only comment is that the photos are a bit of a let down and don’t do the recipes justice after seeing them on the show! But regardless of piccies this is a great book – one that you could cook from for weeks on end and produce something different every night!!

Recipe 12 – Baked Cheesecake
LOVE LOVE LOVE! Baked cheesecake is a favourite and I managed to tweak this one to even be a little healthier! Low fat cream cheese and sweetener worked well as substitutes without ruining the texture and flavour! LOVE!!

Makes me want to watch the whole series again!!

Recipe 11 – Chicken and Autumn Vegetable Pie
OMG, comfort and perfection! So happy with this one!

The perfect family dinner, whip up the filling the night before and then pop on a pie lid the following night and hey Presto! Pie – tastic!!

Recipe 10 – Flatbreads with Fennel and Feta
I adore raw fennel and this is a perfect hero for this dish with the creamy feta it ROCKED!!

A perfect example of simple ingredients in a winning combo!

Wk 45 / Bk 40 – Ultimate Cookery Course Nov 3rd 2012
Loving watching Gordan’s new show they have done a really good job of making this renowned screaming, cursing chef into a loveable, humble ‘home cook’! Packed full of top tips and easy to rustle up meals that take you from basic principles to fantastic adaptations to wow the dinner table without toooo much skill!

Recipe 9 – Fish with Sweet Chilli sauce
Any recipe that lists peanuts, fish sauce, chilli, lime and garlic is a winner in my book! We used trevally rather than red mullet but it worked beautifully, my crust wasn’t as impressive as Gordon’s probably needed to be a little bit more delicate!! But great flavours and great dish!!

Recipe 8 – Pan seared Scallops and crunchy apple salad
Still a few more apples to shift and this is a gorgeous crisp salad with fresh, fat scallops and a zesty lemon hit! Just fab!!

Recipe 7 – Apple Crumble
Stack of lovely fresh apples and a few pantry items and this is a winner! The ferrari of crumbles with a whole vanilla pod and dried cranberries to add a luxury edge to an old fave!

Recipe 6 – Bean and Olive Bruschetta
Ok not the name in the book and I have butter beans rather than cannellini but it all worked! Pop a couple of Ortiz and anchovies and it is happy, happy days!! Super food!

Recipe 5 – Leek Flatbreads

Super, super simple, 4 ingredients, mix, knead, rest, roll and grill! GORGEOUS!!!! Perfect for brunch and I reckon a damn good bread with a curry!!

Recipe 4 – Coriander, Ginger, Chilli butter Chicken

Murgh Makhani is Gordons fave Indian dish and his take on it is gooooood!! Quick, easy, bit of marinading and touch of grilling and tender chicken with delicate spice is ready to go!

Recipe 3 – Wasabi Beef Tacos
Steak, wasabi, post grill marinade and a zingy cabbage salad! Amazing!! LOVE wasabi and for a healthier option I substituted mayo for yoghurt. Steak perfectly pink and delicious! Love the little trick to wrap the tacos around a rolling pin to shape them into ‘Taco Cowboy Hats’!! Super quick cabbage topping and dinner is on the table and ready to go!

Recipe 2 – Moroccan lamb and sweet potato

Slow cooker-tastic! A gorgeous little piece of lamb shoulder bubbling away with spices, tomato and plump raisons yum!!

Recipe 1 – Slow cooked short ribs

Easy! Though I couldn’t get short ribs so we have big boy ribs! I would do this in the slow cooker next time just to get that real flaking meat result but this was a great dish with brilliant flavour combos and very easy!!
